IRS: no we know exactly how much you owe but you have to guess the number too

I know this is a fun meme, but there are a lot of tax situations where the IRS doesn’t know what you owe. Only in the most simple cases is that true. That doesn’t mean that there should not be an easy way to file for those cases.
They don't know but if your shit looks fishy they'll audit you and then they'll know.
