Please don't bacon wrap your scallops. Instead sear them in bacon fat, salt and pepper to taste. Don't crowd the pan, cook 5-7 at a time on medium high heat. Shake pan after a minute or so. If they slide it's time to flip, if not let them sit. Put finished in a bowl that can be kept warm. Enjoy!

PSA: commonly-sourced scallops will be filled with sand and be very gross and annoying with every, gritty, tooth-grinding, crunchy bite. Found this out the hard way by wasting a $65 bag from Costco because every scallop had sand with every bite. It was so gross and disappointing and infuriating.

So when you buy scallops you should always rinse them and then dry them before searing.
