opinion:

Alder wood is my favorite wood to smoke with because of its neutrality. Its not as opinionated as other woods. It doesnt override the flavor of the food with its own flavor. It just adds a clean, clear smoke flavor, while preserving the flavor of the food.

Of course, this may have something to do with the fact that i have hundereds of alder trees around me.
