Deer backstrap:

- Johnnys seasoned salt

- pepper

- cook high heat with butter, about 30 seconds sear and then flip, add more butter, toss in some shallots and baste another 30 or so.

- some sautéed cabbage on the side!

It’s like I’m eating red meat scallops 🤤
