you can find relays in your settings -> network tab.

the most common ones are

wss://relay.primal.net

wss://relay.damus.io

other good ones are

wss://relay.mostr.pub/

wss://relay.mostr.pub/

wss://nos.lol

basically, you can choose where your content gets sent to. So if you unplug from the damus relay and start posting, content will no longer show on the Damus app and so on.
