That should be plenty. One well connected channel should be enough. Do you use alby cloud or through your own node?
AlbyHub. Separate node, but they manage it for me
Same set up to mine. Just zapped you and it took 10 seconds. Not instant but not a minute. I run my node on Start9, maybe that's the difference? Your channels, if they are to nodes that aren't well connected then the zap might have to find a convoluted path?

Maybe its just a node on the path of your payments that is slow, not even necessarily your node that is slow. In theory nodes you route through or the receiver can hold the payment (htlcs) for hours.
Maybe you zapped some receiver that doesn't instantly settle the payment, iirc the Zeus lightning addresses can hold htlcs.
Same from self hosted Umbrel, I always assumed it was the Alby browser extension.
