So if you try to boil the feet with that outer, scales layer, it won't be able to get to everything inside. Thats at least my understanding.

Every tutorial I've found for turkey/chicken feet bone broth has involved peeling that outer layer off. Plus, that layer is kind of nasty from all the debris and such even after you rinse it thoroughly

But even after you peel that outer layer, you still have the number of skin layers below it. So my thinking is there are not many nutrients in those outer scales too

I pressure cook them. once done every thing is just a crumbly mess. I then press everything through a fine mesh strainer. I think it makes a good broth.
