If you want mature heads, then yes. If cutting as needed, youll be fine
Yes you will need to thin out, if you want plant them in pots to get the most out if them (or eat the sprouts)

Nice. How long did it take to get them back into vegetative growth after harvest?
I cut them back to just a Y before the first frost and left them near a window indoors. First leaves started growing in towards the end of February. With them flowering now I could have peppers in 6 weeks
Plants are amazing. I have never done that with peppers but have with cannabis. Took fully flowering plants about 8 weeks to turn around but they did it and were very healthy and vigorous.
Peppers are technically a bush, so as long as you keep them out of the cold they will keep coming back.
