- buy a 2 pounder that's too big for your pan
- cut off the fat and render it, let that cool, chuck the bits
- add fresh thyme, garlic, salt, pepper, lime juice and honey to the liquid fat
- set oven grill to 240C and grill either side 4 min
- try to eat more than half
time for a new skillet
