Here a good recipe I learned in Brooklyn from a Hawaiian/Filipino friend who owned a restaurant. Layer it in this order:

Hard shell

Sticky rice

Cilantro finely chopped (a dash)

Seared pineapple chunks

Spam or chorizo

Salsa

Guacamole

Lettuce
