Some of the best mashed potatoes I have ever had were in Ukraine. I remember the Ukrainians using 'Yellow' Potatoes (in America, I have been using the popular "Yukon Gold" but they may not be the same thing.) Also, I remember them whisking in an egg or two before the final whipping.
