Over night in fridge with just salt and pepper.

Out of fridge 3hrs prior to baking.

Sear using ghee or olive oil on all four sides

I use a butter, horseradish, minced garlic,rosemary, and thyme rub after the sear……really heavy.

Then pop in oven until medium rare temp bell rings….lean towards the rare side.

All done in cast iron.

I do the same except for:

The butter horseradish after the sear, thanks for stepping up my game
