Hopefully Wasabi coordinators are distributed and numerous enough that it’s a hydra.

There is only one coordinator with enough liquidity and it's operator is doxxed.

Liquidity will flow wherever it needs.

Is there any friction with just switching to another coordinator?

Nobody needs to run a coordinator for coinjoin. Joinmarket and Joinstr are better alternatives.
