Ultimate Meatloaf Recipe

Ingredients

For the Meatloaf:

• 2 lbs ground beef (80/20 for juiciness)

• 1 small onion, finely diced

• 3 cloves garlic, minced

• ¾ cup breadcrumbs (panko or regular)

• ½ cup whole milk

• 2 eggs, lightly beaten

• 2 tbsp Worcestershire sauce

• 2 tbsp ketchup

• 1 tbsp Dijon mustard

• 1 tsp salt

• 1 tsp black pepper

• 1 tsp smoked paprika

• ½ tsp dried thyme

• ½ tsp oregano

For the Glaze:

• ½ cup ketchup

• 2 tbsp brown sugar

• 1 tbsp apple cider vinegar

• 1 tsp Worcestershire sauce

• ½ tsp smoked paprika

Instructions

1. Preheat Oven – Set to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

2. Soften the Breadcrumbs – In a small bowl, mix breadcrumbs with milk and let it sit for 5 minutes to absorb.

3. Mix the Meatloaf – In a large bowl, combine beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire, ketchup, mustard, and spices. Mix with your hands until just combined (don’t overmix).

4. Shape the Loaf – Form into a loaf shape on the baking sheet or press into a loaf pan.

5. Make the Glaze – In a bowl, mix ketchup, brown sugar, vinegar, Worcestershire, and paprika. Spread half over the meatloaf.

6. Bake – Cook for 45 minutes, then spread the remaining glaze on top. Bake for another 15 minutes (total 60 min) or until the internal temp reaches 160°F (71°C).

7. Rest & Serve – Let it rest for 10 minutes before slicing.

Tips for the Best Meatloaf

✔ Use 80/20 beef – Too lean, and it’ll be dry.

✔ Don’t overmix – Keeps it tender.

✔ Let it rest – Juicier slices.
