the reduced surface tension lets the water (including soap) drain almost completely from the dishes.

The prerequisites are reasonably smooth surfaces, little food leftovers and a possibility to position them after washing so that each surface allows the liquid to run down.

This will not work all the time, I guess.

I had the same revelation a decade ago when cooking with some Italian friends. They also didn't rinse the soap off. Don't know if this was just a peculiarity from then.
