Fellow Nostricians!! Do any #Nostrica attendees/organizers have a schedule for Sunday, Monday & Tuesday?

I am hoping to attend virtually but Chef👨‍🍳 is asking me to come in on those 3 days🤦‍♂️. I'm trying to get an idea what hours/days I might be able to get away with missing the least. Anyone? Thanks in advance.
