Have a question. How can we be sure that the signal app in App Store is the same as the GitHub one ?

You can't, same for google store, it requires trust. That's why Obtainium for Android changes the game.
As far as I know it isn't the same app even. The release version has some magic codes that are required in order to connect to the Signal central server.
