You only need one, a reliable one that you publish to. Your profile shows that, so others query your relay to discover your notes.
When you follow others, you store their relay details and so examine their relay(s) to discover their notes.
The reason you actually want more than one relay is resilience and fault tolerance.
Consider a paid relay at nostr.wine or building your own relay at relay.tools
If you’re not ready, or don’t want to pay for relays, then relay.damus.io is very good and nostr.wine is free to query.
