PopOS probably. It’s quite user friendly and has good security defaults.

Currently I'm using Alpine Linux and it is quite fun for me to work through all the kinks, but if it would have to pick one I might just say Fedora (but without the Red Hat drama 🙏). It is rock solid in my experience and cutting edge with new technologies (first to *popularize* Btrfs, first with Pipewire afaik).
