Is there a tutorial that explains how you can set your global feed to paid relays only? Bonus points if said tutorial is written for multiple clients.

Why can’t you just simply choose paid relays in your client and exclude/delete the others?
Nostros in your relays list has a button to individually toggle each relay for global or people you follow only.
