What would taking the like button away do to incentivize zaps?

Most folks use likes as a sort of bookmark, so that's an incentive to zap a post both as a token of appreciation, but also as a bookmark. Unless we test it, it's everyone's guess.

Can zaps function as a bookmark where every post you zapped gets archived almost as if you’ve purchased the content and it goes to a library with categories you can create?

Almost instinctually press the like button to show appreciation and forget I can zap instead.
