Can I set a static LN invoice (LNURLp/w, bolt12, etc. however you want to do it) to receive through specific channel on my node? permitting capacity of course

it is always the sender who decide the channels to use for route a payment, so for achieve your purpose, one way is to set a new node with exacly one channel with another node you control. The new node will be the one to create the invoices, and all payment has to go through the designated channel
