Ironically, my earliest significant experience with flying in a 3D video game was Cybermorph for the Atari Jaguar (which I saved up to buy myself)

I also "learned" to fly from Flight Simulator 2 which was a pack-in for the Atari XEGS, but I don't really count that as much.
