Any plans for a UI? Or perhaps this is something that could be added as a feature to an app like Sparrow?

There is a UI there, but, to some extent what would be needed is some backend infrastructure - need to keep taproot utxo snapshots that can be referenced (each proof refers to a specific set of utxos at a particular point in time).
Kind of stopped working on it this year as there's no interest from anyone else in collaborating.
