I've had it before, it's good but most of their food is either Greek or Lebanese - most likely Lebanese versions. Remember, Israel didn't exist in the region, so all the food and culture and stuff is just from the region there. Most of these people are from Europe or America not locals.

same, it will stay with you. The place is really really special, if it was still the Palestinian territories as a whole, you'd have Jewish quarters, Christian quarters, Muslim quarters across a vast wide area. Places like Jerusalem would have the best mix of Abrahmics, and not only would you have gotten perspectives from everyone there, you would have been able to enjoy all the different variations or styles of the same foods, like Hummus etc.
Now it's just all "Israel" and then to make up for that robbed vibe, they literally steal recipes and cultures to try recreate it.

Honestly, I really would love to visit the entire region. Pretty much anywhere Israel wants to colonize is likely a great place to visit from a historical perspective. Hell, not a Muslim, but even the whole 'Pilgrimage to Mecca' always seemed like a very interesting thing to experience.

Falafel belongs to the Levantine and Egyptian culture only. Hummus, on the other hand, is only found in Levantine culture.
