Do you use it as a butter replacement ?

Not really. I'll use ghee primarily as a cooking oil. It's butter with all the water content boiled off and the butterfats fried in the remaining oil. It's more like a really fragrant tallow, and I'd use it interchangeably with that or lard.

So if something calls for butter, I just use butter.

First time I've made it with Amish butter. And I really really hope this natural foods store I frequent doesn't go under. Thankfully they're doing well by being the only source of raw milk around here.

Must smell amazing. And give a nice taste to anything you cook with it

It's also nice to put a small spoonful of it over any savory dish. It's really common to do in India and healthy too.

Even a bowl of white rice is elevated with some ghee on top.
