You can split your sats up into smaller groups so that they cannot all be seen at once. I usually aim for an address with 1 million sats before putting it into permanent storage. You have to find the balance.. if your utxo is too small you risk future transaction fees. Better to aim for higher balances that arent going to make you the target of a wrench attack.

Each time you deposit to that wallet will be a separate Bitcoin address. When you spend,the recipient will only see the balance in the address(es) used to pay them.

Also,you can use lightning for smaller payment amounts,if you have a lightning wallet set up.
