Random thought:

I have never had espresso (or cold brew I guess) mixed with sparkling water and feel like I’m missing out.

Can anyone confirm?

Sounds like you might be confusing that, which i’ve never heard of, with nitro brew. It is nitrogenated instead of carbonated and i believe they inject the nitrogen gas somehow rather than mixing with water
