I encrypt DNS. I have been doing it using #DNSCrypt way before DoH/DoT was rolled out.
I think DoH/DoT are only good if you are not using it in a DNS over NSA kind of way (ie. default browser settings)
I use DNSCloak on iOS to encrypt DNS using a dediacted protocol by Frank Denis.
I run a free DNSCrypt Poland service since 2014 or so.
It is available in DNSCloak.
