Cows, as opposed to other ruminants, handle a variety of diets far better. Their fatty acid profile isn’t that affected. This has been pretty well documented. If they have lived in a pasture for a majority of their life, and haven’t eaten spray and vaccines, there is nothing wrong with a corn finished cow.
