I was thinking of using startOS only but a fren here suggest to run proxmox.

For what i've understand, my optiplex is powerful enough to run multiple VM and that simplify saving state of different VM so if there is a problem on one, the others keep running.

I don't have to restart and access physically to the main pc. All can be done remotely.

yeah, look depends on what you need it for. Sometimes it's over engineered for no extra reason. I tried several options, and ended up using ones like Umbrel or StartOS or CasaOS or whatever really, I even tried just 'on-network' connected server using nginx

Ultimately, I just need to run a *small* home server, maybe download a node or two but that's it really. Don't need crazy architectures or virtual machines within virtual machines. Just something that's usable that the whole family can use without going into console or running commands etc.
