I started taking Sats for honey and it is so easy with a lightning wallet. The main difficulty is now that the few who have ₿ at farmers markets, don’t want to part with it to spend.

That makes no sense to me. I’d 100% rather buy-and-spend #bitcoin in one transaction (thanks nostr:npub1ex7mdykw786qxvmtuls208uyxmn0hse95rfwsarvfde5yg6wy7jq6qvyt9 !) than simply pay cash. At the very least you are helping the demand.
