I have a business, Who deals with all manner of people shady and not so.
I have a somewhat dubious account, they want to pay with monero. I am open to the idea. However is there any way I can verify that day have sent the funds?
I am worried about the possibility that they claim they have sent the XMR, but I never receive it. It's not a small amount....

They provide transaction id.
Anyone can see a transaction was made, just not who or amounts.
You, as recipient, can verify amount.
They, as sender, can prove they sent to your address via tools built into wallet.
There are plenty of guides online for both of you to follow. Have the sender provide you with the transaction private key to be able to verify the transaction.
You should wait 10 blocks (20 minutes) before considering final as you cant spend your funds received before that.
you only have to wait 10 blocks to be able to spend it.
after 1 confirmation they can't reverse the tx and you've been paid.
have them send you the tx id when they make the payment.
then you can confirm using a block explorer
like xmrscan.org
you should also see it on your wallet.
but either way
after its confirmed in a block, you can be confident you have been paid.
