Productive day so far. Got chicken legs butterflied and salted into the fridge to dry brine with baking powder on the skin, cooked 4 lbs of bacon on the Blackstone, bagged up in the fridge for the week, made a fresh batch of mushroom caviar, did some research on my next use for AI, listened to AI Unchained while doing all this, it is only noon but time for a pause.

So now a fresh mixed Manhattan with Tin Cup Rye and cardamom bitters. Next up today it is time to rescape my 40 gallon breeder aquarium. The Buenos Aires Tetras and the red tail shark will be slumming in a 10 gallon for a few days but it will be worth it when they get their new digs. Then they will get a bunch of new frens to hang out with.
