I've lost close to 50k sats on minibits
The team was fairly responsive but then stopped answering me as I was troubleshooting
I'm gonna wait for things to improve a little before putting more sats in a wallet

There is no reason to lose 50k sats if you hold your seed.

So on my end once this dialogue comes up the app freezes and I can't do anything. it comes up right after opening so I'm stuck in a loop
The modal should close on tap elsewhere or on pressing back button.
Could you try to change the internet connection from wifi to data or vice versa?
I tried all of this ... I then restored from the recovery words and lost a lot of sats. coinos recovery was in full but minibits mint is missing about 100k
Ok so after going through more intervals more sats are coming back. Is there a way to know when I stop?
Good to hear. Reasonable point to stop is when you won't find any (spent or unspent) ecash in two to three intervals or when you are ok with the recovered balance + 1 round.
Exception would be only if you increased recovery index manually before - that might cause longer gaps.
For extremely long histories (thousands) there is and option to set starting index to avoid going through from 0, but there you should check their values from mint info screen before starting the recovery and set it to a reasonably loeer one.
