Notesnook on f-droid.org is the closest thing I could find to the Google keep UX. It's alright but not perfect

Joplin for simple and open source. Obsidian if you want to get crazy with plug-ins and links

Joplin. Open source, and you can self host without paying a cent, also can use S3 buckets etc. Unlike Standard Notes which keeps changing their subscription/lock in etc. Got stung by them, never again. Joplin has hundreds of plugins too.

If you want it for something more than just lists, Obsidian is great. You can create multiple links among the notes, which is amazing for applying ideas/themes from one subject matter to another.
