The guide isn't for SeedSigner, its for Passport users to learn how to do multisig. Adding a third Passport in this scenario doesn't really teach the user anything new, so I like to feature other open source HWW to show how Passport can work alongside them.
Anyway... you can switch keys on Passport in <2 minutes right now, but we're adding full ephemeral key support in an upcoming firmware release.
