I just do it yolo, but basically use the green pumpkin type, cook it long with lemon peels, cynamon sticks and at the end add orange grated peel and juice, brown sugar as much as your preferred sweetness taste.

Optionally add also vanilla sticks and almonds or wallnuts.

Cook the jars in boiling water before filling and keep them upside down once filled.

Actually, don't add almonds, they turn the jam into an explosion bomb, some kind of fermentation occurs and it makes a big mess.

Learned it the hard way :-)
