I have wanted to try npub.cash and use it as my handle but never understood how to do that. Is there documentation on that?
No, not really as it depends on the Cashu wallet you use. You can enable it in the settings of Cashu.me for example. Sovran uses it as the default Lightning address for its users

What's the difference from the original egge?
Many internal changes, like no longer relying on an external lightning service. Now everything is done inside the Cashu ecosystem.
V2 no longer mints ecash for you, but only keeps track of the minting claim, so that the wallet can mint the ecash itself.
Users can now select their preferred mint as well.
