Anyone has any idea why my following list keeps getting completely wiped out over and over? I only ever use nostr:npub1wnwwcv0a8wx0m9stck34ajlwhzuua68ts8mw3kjvspn42dcfyjxs4n95l8 and a fixed set of relays.

Try Nostur, had the same issues with Iris and Damus. Never happened with Nostur. Even better: if you’ve been on Nostur and contacts disappear in other clients, Nostur gives you a notification and you can restore them…
Thanks, will check it out. My main driver is Tor Browser and Iris seemed to work best when using it. Maybe if I manage to hack my router to route all the traffic through Tor by default using other apps would become easier.
