Genuinely depends on the function of the VPS. I have some servers in Iceland via 1984 that I keep at the default and then I have a couple that I change to my own local time zone because I consider it to be my personal cloud so it has stuff like my calendars and other stuff that I kind of want to be in my own time zone.

Also, some other servers that I use for clients, I have them on specific time zones because it's the time zone of the client, generally just depends the use of the server.
