You can even make mayo from scratch and use that instead of Greek yogurt. That’s my preferred route. Both delicious and healthy though.

I’m not a big fan of mayo. I make my own whenever I’m craving chicken or potato salad but other than that I use Greek yogurt for just about everything.
Definitely not going to fault you for that. I like homemade mayo, but Hellman’s or other crap in stores or restaurants is vile.
Do you have a mayo recipe too?
Honestly just search for any homemade recipe and play around with the base recipe. Little more lemon juice, less mustard. Basically, a cup of olive oil, an egg, a tbsp Dijon, and juice from half a lemon. Season around from there and do it with an immersion blender.
