Good try. Maybe don't use such high heat if its burnt on the outside and raw on the inside. Adding cocoa powder shouldn't effect it too much. The way you know when to flip a pancake is when you see bubbles forming in the batter than its good to flip. Should only take a couple of minutes.

Just keep at it! I know some people prefer intuitive cooking. I like instructions. But it just takes trial and error, before you know it you'll find a method to your madness π
