If it comes to security, which is better, XMPP or Delta?

Delta Chat is e2ee out-of-the-box and uses email layer with autocrypt for key exchange. You'd need to add an extension like OMEMO to make XMPP e2ee.

I forgot to mention Omemo for encryption.

Apps can't be e2ee
