Will holders of 1 BTC in a single UTXO be priced out by tx fees at some point in the future?

No one will ever be priced out. Fees are high because of inscriptions. Once their money runs out will be back to 2 sats per transaction.

They 'need' to be, so I hope they are.

That said, I don't think 1btc utxos would likely ever become 'stuck'

That's a problem for 2140. I'll be long gone by then that's their problem.

Fees will be slightly higher, but they're gonna be higher like you think.
