It goes to the node that opens a channel for you. It's a paid service for them as they need to lock a lot of capital so you have a nice big and reliable channel.
You can also open a channel to them with on-chain flow, without additional cost (except onchain fee), but they may close it after some time if you don't use your channel
Is that how Alby makes money? Alby Hub only opens channels with them?

No, we make money on Alby Cloud subscriptions. We don't have any profit from LSPs fees (at the moment)
You can open a channel to any node - just choose "custom" from a dropdown
