Here's an older Rob Braxman video (from 2020) where he explains how to De-Google Android Phones.

In the video Braxman says he couldn't find an open-source email app that works with GMail. Remember this video is older. There are niw a couple of good options. These are FairEmail and K-9 Mail. They are both available through the Zapstore.dev and F-Droid.org app stores.

But then what's the purpose of DeGoogling if you're going to use GMail anyways.
