The issue is that you can't remove yourself from private groups. It's like people including your email on a thread, you can't really remove it. But we could code a hide group feature.

WhatsApp has a feature to hide conversations (and groups, I think) with a password. SimpleX It allows you to hide profiles via password, which is somewhat similar.

Would it be possible to do something like this with a group? Encrypt it with your private key and hide it?

Sure, as long as the phone is still receiving it, we can do this on the client. It needs to be a password though because otherwise anyone that opens the app (which has access to your keys) can unhide those messages.
