New years day is burgers for lunch. One of my tasks is caramelized onions. Using #ghee, I slowly reduced about 2.5 pounds of onions really slowly until all the water had evaporated out, and the onions were translucent and floppy. I then seasoned them to taste.
Since new years day is a bit special, I added to a hot skillet, 2-3 tablespoons of brown sugar, and about a teaspoon of ground red chili, and 2 tsp of #ghee. Once all the sugar had melted and was mixed with the chili and ghee, I added the onions and left on a slow heat until it was thick and jam-like. If its too hot, you can just add more sugar to offset.
I ended up with about 1.3 pounds of onions containing no seed oils.
