I can relate, although I'm not a beautiful woman (but I am a beautiful man).
I work with a bunch of programmers with hunched over postures, I chuckle all the time when they are talking to me and adjust their postures when they see how much better mine is 😆

That, or you're taller than the average lady and they don't want to look short next to you so you notice their presence.
I know because I subconsciously do this too and spent time to overanalyze my reactions 😜

It's mostly a way to express dominance, you'll also see it in cats, dogs, birds, and lots of other animals that flex or arch their backs in the sudden presence of the opposite sex.
Sometimes they also do it as a self-defense mechanism against bigger and stronger creatures. If you're perceived as being strong, they won't attack.
